Daring Bakers' Challenge Gennaio 2013: Gevulde Speculaas

Questo mese la Daring Kitchen ci ha portato in Olanda, con questo dolce speziato che è proprio nelle mie corde! Un morbido ripieno di mandorle racchiuso da un guscio più croccante al profumo di speculoos, come resistergli? Vista la sua bontà e facilità di preparazione penso proprio che inserirò questa ricetta nel mio taccuino insieme a tutte quelle speciali che voglio ricordare!



GEVULDE SPECULAAS ( per uno stampo circolare da 26 cm)

Per il ripieno:

125 g di farina di mandorle
125 g di zucchero
1 uovo grande
1 cucchiaino di scorza grattugiata di limone
Mescolare nel mixer la farina di mandorle con lo zucchero. Aggiungere quindi l’uovo e la scorza di limone e mescolare ancora. Trasferire in una ciotola, coprire con della pellicola e lasciar raffreddare in frigo per almeno 2 ore (meglio se per una notte intera).

Per il guscio:

250 g di farina
150 g di zucchero di canna
1 cucchiaio di lievito per dolci
2 cucchiai di spezie per speculoos *
un pizzico di sale
175 g di burro morbido

* si può creare da sé il mix di spezie per speculoos mescolando 1 o 2 cucchiaini di chiodi di garofano in polvere, 1/2 o 1 cucchiaino di macis e 1/2 o 1 cucchiaino di zenzero in polvere. Aggiungere a piacere 1/2 o 1 cucchiaino di cardamomo, anice, coriandolo, pepe bianco. Pensare il tutto e aggiungere la stessa quantità in grammi di cannella.

Mescolare in una ciotola la farina insieme allo zucchero, al lievito, al sale e alle spezie. Aggiungere poi il burro e impastare fino a formare una palla. Se l’impasto risulta troppo secco aggiungere un goccio di latte. Avvolgere nella pellicola e mettere in frigo. Lasciar riposare per almeno 2 ore (meglio se per una notte intera).

Assemblaggio:

mandorle intere spellate per la decorazione

Foderare una tortiera con della carta oleata. Preriscaldare il forno a 180°C.
Divedere l’impasto speziato in due parti. Stenderne una parte fino a formare un disco della dimensione della tortiera. Adagiare il disco sul fondo dello stampo. Spennellare la superficie con dell’uovo sbattuto.
Distribuire poi il composto di farina di mandorle livellando bene. Spennellare ancora con l’uovo sbattuto.
Stendere infine l’altra metà di impasto speziato creando di nuovo un disco della dimensione della tortiera. Adagiare sopra al composto di mandorle e premere leggermente. Spennellare con l’uovo e disporre sulla superficie le mandorle. Infornare per circa 40 minuti, o finchè uno stuzzicadenti inserito al centro del dolce non esce pulito.
Togliere dal forno e lasciar raffreddare completamente prima di toglierlo dallo stampo.

Daring Bakers' Challenge January 2013: Gevulde Speculaas

Francijn of Koken in de Brouwerij was our January 2013 Daring Bakers’ Hostess and she challenged us to make the traditional Dutch pastry, Gevulde Speculaas from scratch! That includes making our own spice mix, almond paste and dough! Delicious!

Gevulde Speculaas (for a cake of 26 cm of diameter)

Almond Paste:


125 g of ground almonds
125 g of granulated sugar
1 large egg
1 teaspoon lemon zest

Grind the ground almond with the sugar for two minutes. It must be very fine after this step.
Add the egg and let the food processor combine it - if it is powerful enough. Otherwise you will have to combine it with your fingers.
Store the almond paste in an airtight container in the refrigerator. Although the flavor gets better as days pass by, it is not wise to store the paste for too long, as it contains a raw egg. For the same reason you should not eat the paste unbaked.

Speculaas Dough:

1¾ cups (250 gm) (9 oz) all purpose (plain) flour
1 teaspoon (5 ml) (5 gm) baking powder
¾ cup (150 grams) (5-1/3 oz) brown sugar, firmly packed
a pinch salt
2 tablespoons (30 ml) (15 gm) (½ oz) speculaas spices*
3/4 cup (1½ stick) (175 gm) (6 oz) unsalted butter
* Take at least 1 or 2 teaspoons of ground cloves, 1/2 or 1 teaspoon of mace and 1/2 or 1 teaspoon of ginger. Add to taste 1/2 or 1 teaspoon of white pepper, 1/2 or 1 teaspoon of cardamom, 1/2 or 1 teaspoon of coriander, 1/2 or 1 teaspoon of anise, and 1 or 2 teaspoons of nutmeg. Measure or weigh the amount of spices you have now, and add an equal amount of cinnamon.

Put flour, baking powder, sugar, salt and spices in a bowl. Cut the butter in dices and add.
Knead until smooth. Add a little milk if the dough is too dry. Wrap in clingfoil and put in the refrigerator for two hours.

Assembling and baking the Gevulde Speculaas

Grease the pan.
Preheat the oven to moderate 350°F/180°C/gas 4.
Divide the dough into two portions. Roll out both portions on a lightly floured surface, until they are exactly as big as the baking pan. Put one of the layers in the pan and press it lightly to fill the bottom. Lightly beat the egg with a teaspoon cold water. Smear 1/3 of the egg over the dough in the pan.
Roll out the almond paste between two sheets of clingfoil, until it is exactly as big as the pan, and
put it on the dough in the pan. (If you chose to make the paste soft, you can smear the paste instead
of rolling it.). Press the paste lightly down to fit in the pan, and smear the next 1/3 of the egg over it.
Now put the second layer of dough on top of the paste, press it lightly, and make as smooth as
possible. Smear the last 1/3 of the egg over the dough. Decorate the pastry with the almonds. Bake for 40 minutes in the preheated oven. Let cool completely in the pan, then cut it in portions as you like. If you wrap the stuffed speculaas in clingfoil, after it has cooled completely, you can store it a few days at room temperature. Freezing is possible, but fresh speculaas tastes better.
