Daring Bakers' Challenge, Luglio 2010: Swiss swirl ice cream cake

La sfida della Daring Kitchen di Luglio è stata proposta da Sunita, di Sunita’s world – life and food, e si tratta del Swiss swirl ice cream cake. Questo è un dolce costituito da due strati di gelato di gusti diversi, intervallati da uno strato di caramello. Il guscio esterno invece è composto da fette di Swiss Roll (una specie di rotolo di Pan di Spagna) ripieno di panna montata.



Vi sembra complicato? Beh, più che complicato direi che richiede una lunga, lunga preparazione! In tutto questo però ci sono anche dei risvolti positivi, infatti ho imparato a fare un gelato davvero buono e cremoso senza l’utilizzo di una gelatiera, cosa che mi ha reso veramente entusiasta! Sicuramente proverò al più presto a rifarlo in varianti diverse…l’idea di poter fare dei gelati con gusti introvabili in gelateria mi intriga molto!!
Ciò che rende questa ricetta così laboriosa sono i tempi di attesa, infatti avendo a che fare con del gelato bisogna tenere in considerazione il tempo di congelamento. Inoltre ogni strato del dolce richiede un passaggio in freezer prima di procedere con lo strato successivo. Morale della favola? Avrete bisogno di un giorno intero, anzi, due, se volete prendervela un po’ più comoda (1 giorno per preparare lo Swiss Roll e i gelati + 1 giorno per assemblare il dolce)… non per niente quelle della Daring Kitchen si chiamano sfide! Per il mio dolce ho scelto una dose dimezzata rispetto a quella proposta da Sunita, che mi sembrava troppo abbondante per le mie esigenze. C’era poi la possibilità di scegliere i gusti del gelato quindi ho scelto di fare un gelato all’amarena e uno al cioccolato con noci brasiliane tritate.
Vi propongo quindi la mia versione, che è sufficiente per ottenere 6 fette abbondanti.



SWISS SWIRL ICE CREAM CAKE

Per il Swiss roll:

3 uova
110 g di zucchero
22 g di farina
20 g di cacao amaro
1 cucchiaio di acqua bollente
Un po’ d’olio per ungere la teglia

Per il ripieno:

250 ml di panna
I semi di mezza bacca di vaniglia
35 g di zucchero fino (tipo Zefiro)

Con un pennello spargere un po’ d’olio su una teglia rettangolare di 27x22 cm di lato e foderarla con della carta oleata facendola aderire bene alla superficie.
In una ciotola sbattere con una frusta elettrica le uova con lo zucchero finchè non si otterrà un composto bello denso (quando si alzano le fruste il composto deve disegnare un filo per almeno 10 secondi). Setacciare insieme la farina con il cacao e aggiungerlo alle uova e zucchero in tre volte, mescolando delicatamente. Aggiungere infine l’acqua bollente.
Versare il composto nella teglia e mettere in forno preriscaldato a 200 C per circa 20 minuti (il composto potrebbe gonfiarsi ma niente panico, appena si toglie dal forno si appiattirà).
Mentre la torta è in forno stendere un canovaccio pulito e cospargerlo di zucchero. Una volta cotta sfornare la torta ponendo il lato scoperto a contatto con il canovaccio. Fate in modo che il lato lungo coincida con il bordo del canovaccio. Eliminate con il coltello eventali imperfezioni dei bordi. Arrotolate subito il Swiss roll aiutandosi con il canovaccio e lasciar raffreddare ancora arrotolato.
Nel frattempo preparare la farcitura. In una ciotola porre lo zucchero, la vaniglia e la panna e montare bene. Srotolare il Swiss roll ormai freddo e distribuire sulla superficie la panna, lasciando un bordo di circa un centimetro e mezzo. A questo punto riarrotolare la base, avvolgere nella pellicola e porre in frigo.

Per il gelato all’amarena:

310 ml di panna
I semi di mezza bacca di vaniglia
60 g di zucchero fine
Amarene (quantità a piacere)

In una ciotola adatta al freezer porre lo zucchero, la vaniglia e la panna e mescolare brevemente con una frusta elettrica finchè il tutto non sarà ben amalgamato.
Coprire con della pellicola e porre in freezer. Laciare raffreddare finchè i bordi del composto non inizieranno a solidificarsi. A questo punto togliere dal freezer e sbattere di nuovo con le fruste finchè il composto non tornerà liscio e omogeneo. Coprire di nuovo e mettere in freezer. Ripetere questa operazione per 4 volte. La quarta volta aggiungere le amarene tagliate a pezzetti, insieme a un po’ del loro sciroppo, e lasciar congelare definitivamente.

Per il gelato al cioccolato:

250 ml di panna
115 g di zucchero fine
12 g di cacao
50 g di noci brasiliane tritate grossolanamente

Mescolare insieme lo zucchero con il cacao e porre in una pentola assieme alla panna. Mettere su fuoco medio e mescolare finchè non compariranno delle bolle ai bordi. Togliere dal fuoco e lasciar raffreddare.
Porre in freezer e procedere poi come per il gelato all’amarena. All’ultimo passaggio aggiungere le noci brasiliane tritate.

Per il caramello:

115 g di zucchero fine
12 g di cacao
7 g (1 cucchiaio) di maizena
180 ml di acqua
7 g di burro
Qualche goccia di estratto di vaniglia

In una pentola unire lo zucchero il cacao la maizena e l’acqua e porre sul fuoco. Mescolare finchè il tutto non si addenserà (circa 2 minuti). A questo punto togliere dal fuoco e aggiungere il burro e l’estratto di vaniglia. Lasciar raffreddare.

Per assemblare il dolce:

Foderare una ciotola semisferica con della pellicola. Tagliare il Swiss Roll in modo da ottenere 10 fette e coprire con queste il fondo e i lati della ciotola. Coprire la ciotola con della pellicola e porre in freezer per circa mezz’ora. Togliere dal freezer e foderare con uno strato di gelato all’amarena. Riporre in freezer finchè il tutto non si solidifica (almeno un’ora).
Togliere dal freezer e aggiungere il caramello. Riporre in freezer finchè il caramello non si sarà solidificato. A questo punto procedere con l’ultimo strato di gelato al cacao e riporre in freezer per almeno 4-5 ore.
Al momento di servire capovolgere il dolce sul piatto da portata. Se il dolce a qualche difficoltà a staccarsi strofinare la ciotola con uno strofinaccio bagnato in acqua calda.
Tagliare a fette con un coltello passato sull’acqua calda.

Daring Bakers' Challenge, July 2010: Swiss swirl ice cream cake



The July 2010 Daring Bakers’ challenge was hosted by Sunita of Sunita’s world – life and food. Sunita challenged everyone to make an ice-cream filled Swiss roll that’s then used to make a bombe with hot fudge. Her recipe is based on an ice cream cake recipe from Taste of Home.
This Swiss swirl cream cake which is constituted by two layers of ice cream in two different flavors with a fudge layer between them. Slices of Swiss roll filled with whipped cream form the exterior shell of the cake.



Does it look complicated? Well, it is time consuming, rather than complicated… but there are also positive aspects: I’ve learnt to make a soft and creamy ice cream without an ice cream maker! The idea of making an ice cream with flavors unavailable in the shops is gorgeous for me!
What makes the preparation of the cake so long is the freezing time. Ice cream needs to be set before to fill the cake, moreover each cake layer needs at least one hour in freezer. Therefore preparing this cake takes a full day, two days (one to make the Swiss roll + one to assembly the cake) if you want to take your time!
For my cake I decided to use half dose of Sunita’s recipe and I choose to make amarena ice cream and chocolate ice cream with chopped Brazilian nuts for the layers.

Here I’ll describe my version, enough to obtain 6 large slices of cake.



SWISS SWIRL ICE CREAM CAKE

For the Swiss roll:

3 medium sized eggs
110 g of caster sugar + extra for rolling
22 g of all purpose (plain) flour
20 g of natural unsweetened cocoa powder
1 tablespoon of boiling water
a little oil for brushing the pans

For the filling:

250 ml of whipping cream
1/2 vanilla pod
35 g of caster sugar

Pre-heat the oven at 200 C. Brush the baking pans (11 inches by 9 inches) with a little oil and line with greaseproof baking paper. In a large mixing bowl, add the eggs and sugar and beat till very thick; when the beaters are lifted, it should leave a trail on the surface for at least 10 seconds. Add the flour and the cocoa, shifted together, in three batches and fold in gently with a spatula. Fold in the boiling water. Transfer the mixture in the pan and spread it out, into the corners of the pans. Place a pan in the center of the pre-heated oven and bake for about 10-12 minutes or till the center is springy to the touch. Spread a kitchen towel on the counter and sprinkle a little caster sugar over it. Turn the cake on to the towel and peel away the baking paper. Trim any crisp edges. Starting from one of the longer sides, start to make a roll with the towel going inside. Cool the wrapped roll on a rack, seam side down.
In a large bowl whisk together the sugar, the seed of the vanilla bean and the cream and beat until very thick. Open the rolls and spread the cream mixture, making sure it does not go right to the edges (a border of ½ an inch should be fine).
Roll the cakes up again, this time without the towel. Wrap in plastic wrap and chill in the fridge till needed, seam side down.

For the amarena ice cream:

310 ml of whipping cream
1/2 vanilla bean, minced or 1 tsp/ 5 ml/ .15 fl oz vanilla extract
60 g of granulated sugar
Amarena cherries, chopped

In a mixing bowl, add the cream, the sugar and the seeds of the vanilla bean and whisk lightly till everything is mixed together.
Pour into a freezer friendly container and freeze till firm around the edges. Remove from the freezer, beat till smooth and return to the freezer. Do this 3-4 times, during the fourth time add the amarena cherries and fold gently. Set completely in the freezer.

For the hot fudge souce:

115g of caster sugar
12g of natural unsweetened cocoa powder
7 g (1 tablespoon) of corn flour/cornstarch
180 ml of water
7 g of butter
1 tablespoon of vanilla extract

In a small saucepan, whisk together the sugar, cocoa powder, corn flour and water. Place the pan over heat, and stir constantly, till it begins to thicken and is smooth (for about 2 minutes). Remove from heat and mix in the butter and vanilla. Keep aside to cool.

For the chocolate ice cream:

250 ml of whipping cream
115 grams of caster sugar
12 g of natural unsweetened cocoa powder
50 g of Brazilian nuts, chopped

Grind together the sugar and the cocoa powder in a food processor. In a saucepan, add all the ingredients and whisk lightly. Place the pan over heat and keep stirring till it begins to bubble around the edges. Remove from heat and cool completely before transferring to a freezer friendly container till firm around the edges. Remove from the freezer, beat till smooth and return to the freezer. Do this 3-4 times. During the fourth time add the chopped Brazilian nuts and fold gently. Set completely in the freezer.

Assembly:

Cut the Swiss roll into 10 equal slices (approximately 1 cms each). Cover the bottom and sides of the bowl in which you are going to set the dessert with cling plastic wrap. Arrange two slices at the bottom of the pan, with their seam sides facing each other. Arrange the Swiss roll slices up the bowl, with the seam sides facing away from the bottom, to cover the sides of the bowl. Cover the bowl with plastic wrap and freeze till the slices are firm (at least 30 minutes). Soften the amarena ice cream. Take the bowl out of the freezer, remove the cling film cover and add the ice cream on top of the cake slices. Spread it out to cover the bottom and sides of the bowl. Cover the bowl with plastic wrap and freeze till firm (at least 1 hour) Add the fudge sauce over the amarena ice cream, cover and freeze till firm (at least an hour). Soften the chocolate ice cream and spread it over the fudge sauce. Cover with plastic wrap and freeze for at least 4-5 hours till completely set.
Remove the plastic cover, and place the serving plate on top of the bowl. Turn it upside down and remove the bowl and the plastic lining. If the bowl does not come away easily, wipe the outsides of the bowl with a kitchen towel dampened with hot water. The bowl will come away easily.
Keep the cake out of the freezer for at least 10 minutes before slicing, depending on how hot your region is. Slice with a sharp knife, dipped in hot water.
